I have been baking my whole life; literally. I come from one of those households where my Dad wanted dessert after every meal. Since my Mom worked a full time job and came home each night and put the dinner on the table, the job of dessert fell on me. So at the age of 6, I was rolling piecrust. That started a life long passion for baking.

I still love making pies, cakes, and cookies. But I was determined to conquer the art of making really good bread at home. And it is an art. Really good bread takes more than simply being able to read a recipe. It takes all our senses. Feeling, smelling, tasting, hearing, seeing; all work towards making that perfect loaf.  

The bread that once could be purchased from local bakers is long gone. It's very hard to find bread that is authentic. If you do happen to live near a good baker, the price makes it something you allow yourself to have on special occasions or when friends are coming over. My family of five could easily put away 2 baguettes, even before dinner started. My passion for bread baking came from necessity. Having good bread available, and bread that I was happy to give my family.  

I have studied books and taken many classes on the subject, but more importantly, I bake a lot of bread! I can talk protein levels and hydration percentages, essential knowledge for professional bakers making hundreds of loaves each day. That won't be the focus of my classes. My classes will focus on getting into the rhythm of baking bread, adapting it to your very busy lifestyle. Knowing when to start a poolish, mix the batch, and finishing the baking. Because I too work a full time job, I have had to learn all of this for myself. Professional baking classes rarely cover this. My goal is that each student adapts bread baking into their everyday lives.
